Why don’t they use a sphere and use a spherical coordinate system? (angle, angle, distance)

Could someone explain to a noob why the known universe is a cylinder (that even contains right angles) and why the centrepoint of the cylinder was picked to be where it is? (Is that where earth is?)

I can definitely relate. I have several PDFs of advanced textbooks from when I wanted to learn some very niche skill. The latest one is an economics textbook from when I wanted to learn about different types of auctions and the maths/game theory behind each.
